  • ½ cup + 1 tablespoon granulated sugar (100 g / 3.5 oz caster sugar)
  • 2 large eggs
  • ¾ cup + 1 tablespoon thick jam or fruit butter (about 7 fl oz)
  • 5 tablespoons heavy cream (approx. 2.5 oz / 70 g)
  • Optional vanilla extract or orange blossom water
  • Flaked almonds for topping

Equipment

Use tartlet molds or a mini muffin tin. A cutter about 4.5 inches (11 cm) in diameter is helpful but not required.

Instructions

1. Preheat the Oven
Preheat your oven to 356°F (180°C).

2. Prepare the Pastry Shells
Roll out the puff pastry and cut rounds large enough to fit into your tartlet molds or mini muffin tin. Press the pastry into each mold and prick the bottom with a fork.

3. Add the Jam
Place about one heaping teaspoon of thick jam or fruit butter into the center of each pastry shell.

4. Make the Almond Filling
In a bowl, whisk together eggs, granulated sugar, almond flour, heavy cream, and any optional flavorings such as vanilla or orange blossom water until fully combined.

5. Fill the Shells
Spoon the almond mixture over the jam in each pastry shell, filling them to about three-quarters full.

6. Add the Topping
Sprinkle a few flaked almonds on top if desired.

7. Bake
Bake for 18 to 22 minutes or until the filling is set and the pastry edges are golden brown.

8. Cool and Serve
